Brunch



So, what do you add or do to bacon to make it even tastier than normal? Just have really well cured bacon, or cure it with maple syrup or something? I have no idea, but this must have been an example of it. The eggs benedict were amazingly tasty too. I think this was actually my second plate of eggs bennie and bacon - it was *that good*.

Start with a really good pork belly from a pig like Berkshire and brine it perfectly, then giving it just the right amount of smoke will give you some really really good bacon. It is not one thing that makes great bacon great.
